The viticultural origins of this exploitation go back to quite distant times. Part of this property belonged to General Eugene Dubern who distinguished himself particularly in Africa and especially in Algeria (1839 and 1840). In 1879, Mr. Révolat, a young owner of the time, received a gold medal for one of his crops; since then, many other awards have followed. At the end of the decade of the 1970s, Mr. Albert Yung, strives to fully reconstruct the vineyard and modernize cellars and vats.
Thierry Yung manages this wine estate which consists of the appellations: Graves, Bordeaux Supérieur and Bordeaux with mainly selected red grape varieties of Merlot and Cabernet Sauvignon.

For Thierry Yung, at Château Haut-Calens, some vines have frozen, others not, the quantities are reduced (18hl / ha), but the quality is present: the rosés are fruity, the red structured.
It markets in 2018: Rosé 2017, Bordeaux Superior 2015, Cuvée Spéciale 2014, Haut Calens 2014 and 2015.

It can be proud of its beautiful Graves Château Haut-Calens red Special Cuvée 2015, aged in barrels, with aromas of ripe red fruit (blackcurrant) and sweet spices (cinnamon), fleshy, of great intensity, with tannins tasty and powerful at the same time, excellent evolution. The 2014 has powerful aromas of cooked fruits, humus and spices, rich palate, where smoked and pepper can be detected, a perfect wine today on a rossini style pavé or a gibelotte rabbit.
The Graves Château Haut-Calens red 2015, fleshy, all in aromatic nuances, of sustained robe, with ample tannins, with this nose where dominate the blackberry, the cherry and the undergrowth.
The 2014 mixes color and structure, with a nose dominated by fresh fruits (blueberry, currant) and humus, with, on the palate, connotations of black fruits and smoke.
Taste its Bordeaux Supérieur Château Croix de Calens 2015, which develops tannins present and fine at the same time, brilliant dress, with notes of raspberry and cherry, very balanced in the finish, with a spicy touch.
Taste also its beautiful pink Calens Cross 2017, with fruity aromas of strawberry, white peach, with this touch of pleasant nervousness, subtly spicy, always very seductive.

Tasty 2014, with firm, round tannins, is an intense, harmonious, mouthfeel dominated by macerated red berries, full-bodied, perfect on a shallot tab or a rack of parsley lamb. The 2013, delicate nose, mixes power and finesse, with nuances of violet and ripe strawberry, generous to the taste buds, a very successful wine.
Very nice Graves white 2016, very typical Sémillon (80%, the rest in Sauvignon), gravelly soils and gravelly, vine age 35 years, with a flowery nose, pale, brilliant and limpid, which combines vivacity with the elegance, a beautiful aromatic complexity where we find lemon nuances, with a nice note of freshness very pleasant in the final. The 2015, with this unique bouquet of fresh citrus, a beautiful bright pale gold, a very good acidity, a beautiful persistent freshness, is a classic wine, ideal, for example, on a St. Peter in crust or fish bread with shrimps. An area of ​​19 ha from an exceptional soil of siliceous gravels and gravelly clays dotted with limestone (65% Sauvignon, 15% Sauvignon gris and 20% Semillon for white wines, 60% Merlot, 30% Cabernet Sauvignon). and 10% Cabernet Franc for red wines). Manual harvesting, 30% white aging in new barrels for 6 months on fine lees and 70% in lees on lees too; red: drop wine 80% of the harvest in barrels for 12 months and wine press 20%. The wine produced on the estate is characterized by a mineral expression in both red and white reflecting the type of clay-limestone soil. The vine has been present for a long time at the Domaine de Grandmaison: as early as the 18th century, Monsieur de Belleyme, Cartographer Engineer of King Louis XV, mentioned our growth then called Barreyre. As time has gone by, wine production has sometimes stopped (because of frost, phylloxera), and has sometimes given way to polyculture. Grandmaison has also been used as a country house. François Bouquier, who had to leave his native Cantal at the beginning of the twentieth century, sometimes took the harvest and acquired the estate in 1939, when he knew it was for sale. Then, from 1970, Jean (his son) and his wife Françoise reconstituted the vineyard and began the construction of the current vat room. Grandmaison then entered production again. Since 1988, it is François (their son) who vinifies and with his wife Mayi, both devoted to the family property since 1993.

François Bouquier tells us that he was hit by the 90% freeze, the remaining 10% are of very good quality, and this 2017 will be a successful year with a nice balance, but it will not have the panache of 2016. Sales in 2018 are oriented for the reds towards 2013, 2014 and 2015, and the whites 2016 and 2017. Each year, renewal of certain plots and change of equipment, if necessary. At Les Bouquier, he reminds us, always the same motto: 1 single red wine, 1 single white wine!

A favorite for this beautiful Pessac-Léognan red 2015, where the structure predominates, with a powerful nose with hints of blackberry and humus, well fleshy as it should be, very good frame, with harmonious tannins, a distinguished wine, ample, full mouth. The 2014, nose violet and undergrowth, all in color, with on the palate these subtle and intense notes of overripe red fruits, with ample but well-melted tannins, is very harmonious.
Excellent 2013, tasty, with hints of currant and humus, mixes a tannic delicacy with a roundness in persistent mouth, a final with these notes of smoked and overripe wild strawberry. The 2012 is a nice deep color, very fleshy, all in aromatic nuances (macerated fruits, spices), of dark dress, of complex mouth where dominate the plum, the leather and the undergrowth, with sweet tannins, with a very persistent. The 2011, intense color with black highlights, is a generous wine, with aromas of red fruits and spices, and tannins well coated, typical and persistent, ideal on lamb chops with vegetables or a net veal with porcini crust. Remarkable 2010, rich in color, dense, where mingling cherry and humus, a fleshy wine, robust, guard. Tasty 2009, with notes of macerated fruit and spices, fat, with very balanced tannins, characteristic fleshy, well in mouth, beautiful evolution. The 2008, of deep color, structured, ample, with rich tannins and which blend well, aromas of ripe fruits (blackcurrant, cherry ...), all in the final.
Remarkable Pessac-Léognan white 2016, bold, dense, full-bodied, with subtle nuances of apple and dried fruits, sweet mouth, mixing finesse and persistence. The 2015, delicate nose, with citrus and white flowers, is all in elegance. Excellent 2014, in the nuances of flowers, finely peppery, fat but nervous, very well balanced, mouth scented and full, when the 2013 is a dry but sweet wine, nice golden dress, very round, very fruity, powerful mouth and persistent, with notes of almond and peach.
