In 1982, Daniel Laurent took over the family farm from his parents. His father produced only a tiny part of his harvest in Champagne which he reserved for a few friends and customers, the rest was sold to Champagne merchants, to the grape harvest, to grapes. As soon as he arrived, he decided to produce his own Champagne, with the help of his wife, they are supported today by Marie-Marjorie, their daughter. Their exploitation is very modest, with 3 ha of vines located on two terroirs: 90% in Avenay-Val-d´or, classified 1er Cru, and in Avize, classified Grand Cru. Clay-limestone surface silt 40 to 60 cm and chalk subsoil, with flows of millstone. South-south-east. Very traditional vinification, aging in barrels for 30% of the production. vinification of the base wine for part in barrels for the elaboration of the blend of cuvées. No malolactic fermentation. Beautiful new cuvée Extra brut, which develops a very aromatic bouquet with connotations of white flowers and lemongrass, a Champagne of light foam, frank mouth, lively, charming.
Always this remarkable Champagne Grande Réserve brut, 75% Pinot Noir, 20% Chardonnay, 5% Meunier, 2013 edition, 2012 blend and half reserve wine, it has a delicately golden hue, with discreet notes of honey, nuts and rose, which combines freshness and structure, all in aromas.
Champagne Reserve brut, 2015 edition, 2014 blend for half and vinified reserve wines type “solera”, has notes of lime and apricot, well balanced, vinous mouth with creamy touches. The Blanc De Blancs brut, powerful and bouquet, with delicate scents of rose and lemon, a certain nervousness in the mouth, mixes structure and finesse, a Champagne with a nice finish on the palate, to be expected on a lobster with basil or a strawberry shortbread pie. Their 2002 vintage, 80% Pinot Noir, 20% Chardonnay, produced from vinification without malolactic fermentation and without cold passage, aged 6 months in oak barrels, very pearly and very persistent foam, is a rich Champagne, while mouth, where we find scents of lemon and honey, fruity on the nose as in the mouth, distinguished.
As for the Grand Rosé brut, 2015 edition, white wine and red wine in 2014, it is pretty foam, suave as it should be, and gives off nuances of strawberry and spices, a Champagne of very beautiful color, full-bodied and round at the same time, perfect, for example, on red mullet or beef carpaccio.

The Legras-Haas family owns 35 ha of vines, the vast majority of which are located in Chouilly, an exceptional vineyard in the Côte des Blancs classified Grand Cru and planted almost exclusively with Chardonnay. In their quest for perfection, the family developed the vineyard in “terroir vitryat” in the Marne and in the commune of Les Riceys in the Aube. So many plots and as many expressions of the terroir that sublimate the complex and delicate blends. It is in particular thanks to this inimitable aroma of wild strawberries from Pinot Noir des Riceys, that the House offers its rosé wine so delicately fruity, a perfect success. The strength of the Legras brothers is a common and uncompromising vision of the development of their wines which they want while being precise, full and apt for aging. Three key words behind exclusive champagnes, far from established standards.
Jérôme Legras tells us that “2018 and 2019 are two vintages which are not alike but which are very qualitative. While the vine had produced a lot in 2018, in 2019, the quantity is a little less important but in any case the harvest was of very good quality. We find in the wines a very great freshness, fairly strong acidities that make me think of 2008 or 1996, these are very promising wines for the future.
We are marketing the 2012 vintage, it replaces the 2011. It’s the House’s great classic, this Champagne with a blue label. It is very juvenile, with notes of very fresh white fruit, nice salinity on the finish, a vintage with structure and freshness, a great success, it will please a lot. The 2011 was a more evolved, silky, richer Champagne, the 2012 has more structure and freshness.
At the end of the year, we are releasing our 2014 Les Sillons cuvée, a very elegant Champagne, just as much as the 2013 but more affordable young. The 2013 was of great guard, the 2014 is all in smoothness and more accessible quickly.
We are also releasing our Pi vintage for the second time, it is a blend of our best vintages of Chardonnays de Chouilly since 1995, only 900 magnums will go on sale in March, the label is white decorated with the Greek letter. A cuvée raised only in solera.
As for Requirement 9, there are two strengths, raw and raw natural. The two find a very interesting balance, this is not usual, but as it worked well, we decided to offer them, there is no guarantee that we will do it next time for Requirement # 10. When tasting, these two dosages are very interesting, the nose is quite similar but, on the palate, a more saline and tense finish for the brut Nature, it is really very subtle, while for the brut, the finish is very sweet.
We also have a nice Coteaux Champenois, still the 2014 vintage, we didn’t do it afterwards, it’s not a wine that we release every year. ”
Always very welcome in this exemplary House, we tasted with Jérôme their Blanc De Blancs Champagne Grand Cru Les Sillons 2014, with a superb pale gold color, with complex notes, fresh almond, ripe fruit and berries dry, with aromatic persistence, great length in the mouth. Also this very beautiful Extra-brut cuvée, a Blanc De Blancs from a plot selection of the best localities, with a dosage close to natural brut, with the scent of fresh almond, lemon, pippin apple, very fresh, intense and round, with a subtle and persistent nose, very mineral and mature as we like them.
Superb Grand Cru Blanc De Blancs Champagne vintage 2012, which has clear aromas of wheat, dried tobacco and stewed fruit on the nose. The mouth is full, fresh, the Chardonnay is manifested by aromas of yellow fruits, honey and dried apricot.
Blanc De Blancs Grand Cru, a single grape variety, Chardonnay, a single cru, Grand Cru Chouilly, with the incorporation of reserve wines to ensure continuity in quality, a cuvée of a limpid color, while delicacy, with a frank and flowery nose of rose and ripe pear, with a subtly spicy mouth.
It is followed by Requirement N ° 9, 50% Chardonnay and 50% Pinot Noir. Two unique terroirs married in a demand for perfection. Dense nose of hazelnut and grape juice, full and fresh mouth, very nice balance underlined by attractive aromas of apples and pears.
The brut Intuition, of fine and persistent foam, combines finesse and structure, of a brilliant yellow, with the scents of flowers and spices.
You will also love this beautiful rosé Champagne, which smells of wild strawberries, full in the mouth, combining richness and distinction, with a great finish, which we advise you, for example, with a puff of sweetbread or crispy apricot with iced nougat.
Also discover the Coteaux Champenois blanc Chouilly 2014, 100% Chardonnay, suave, ample, full of aromas, with a beautiful persistence.
